This is one of the nicest ways to eat fruit at any time of the day, and it makes a delicious course for a winter lunch. If you don’t like the taste of honey – and it is surprising just how many people don’t – use maple syrup instead.

Ingredients

  • Half a 1-lb/450-g pot of thick honey
  • 3 good eating apples, e.g. Cox’s

Method

Melt the honey in a wide sauté pan and gently cook the sliced apples in it for a few minutes. Stir in the cardamom seeds, pineapple, grapes, ginger and grapefruit. Heat them all together gently – the only possible casualty might be the grapefruit, which tend to break up a bit in the heat. Keep the fruit salad warm till you are ready to serve.
