Fruity meringue pies I love. I wish I didn’t like sweet things so much. This is delicious served with crème fraîche, or with vanilla ice cream, which is especially good if you serve the pie warm.

  • 5 oz/140 g butter, chilled and cut into little bits

Method

Put the butter, flour, icing sugar and ginger in a food processor and whiz until the mixture resembles breadcrumbs. Press lightly over the sides and bottom of a flan dish about 9 inches/23 cm in diameter. If you do not have a food processor, rub the butter into the dry ingredients, using your fingertips, until the mixture looks like breadcrumbs. Put the dish into the fridge for at least 30 minu
