You can vary the fruits you use according to what you can get! This is a most attractive pie – and it is delicious. I love the contrast between the textures of the crisp pastry, the smooth cream and the fruit.

For the pastry

  • 3 oz/84 g butter, chilled and cut into bits

Method

Put the ingredients for the pastry into a food processor and whiz till the mixture resembles fine breadcrumbs. Pat this firmly around the sides and base of a flan dish measuring approximately 9 inches/23 cm
