Upside-Down Pear and Walnut Gingerbread Pudding

This freezes beautifully. It is a most delicious and comforting pud on a cold day.

Ingredients

  • 4 oz/112 g self-raising flour
  • ½ tsp bicarbonate of soda

Method

Make the topping first. Melt the butter and sugar together and stir for 1–2 minutes over a gentle heat. Pour into an ovenproof dish and arrange the pears and walnuts over it.

Sieve the flour and the dry ingredients into a bowl. Add the egg, sugar, treacle, milk and melted butter and mix well. Spoon the mixture over the pears and walnuts and bake in a mod
