Apple pie, apple turnovers, apple upside down cake . . . the fruit we’re supposed to eat every day to keep the doctor away certainly makes a mean pastry. These madeleines are adapted from a recipe my friend Francie shared with me. Her French grand-maman, Alice Charbonneau, made an amazing apple turnover, which I transformed into a madeleine (naturally!).
