In the heat of summer in the south of france, hillsides bloom abundantly with an array of herbs. Herbes de Provence typically includes rosemary, fennel, oregano, and mint. In these madeleines, the mixture infuses every bite with a delicate aroma and subtle taste.

Ingredients

  • cup plus ¼ cup shredded sharp cheddar cheese, divided
  • ¾ cup all-purpose flour
