Bananas Foster Madeleines

If i must have a chocolate-free dessert, I’ll choose this one every time. Created by layering a sweet sauce of brown sugar, butter, and sliced bananas over vanilla bean– flecked ice cream, bananas Foster is also often set alight after the rum is added. For this adaptation, vanilla madeleines are served under or alongside vanilla ice cream and topped with a brown sugar syrup. Feel free to spoon some rum over top and ignite it for a spectacular presentation.
