Cashews that have been freshly fried at home have an exquisite taste, far better than that of the tinned and packaged variety. In India, this was the only kind of cashew we ate, with my mother frying the nuts just before my father sat down for his evening Scotch and soda.

Raw cashews can be bought at most health food stores.

Ingredients

  • vegetable oil, to deep-fry
  • 225 g/8 oz raw cashew nuts

Method

  1. Put a sieve on top of a metal bowl and set it near the stove. Also, line 2 plates with kitchen paper and set them nearby.
  2. Heat about 2.5cm/1 inch of oil in a deep, 20cm/8 inch frying pan over a medium flame. When hot, put in all the cashews. Stir and fry them until they turn a reddish-gold colour. This happens fairly fast.
