Cut the spinach across into 1cm/½ inch wide strips. Now chop the onions finely.
Heat the ghee or oil in a fairly large pot over a medium-high flame. When hot, put in the onions. Stir and fry for 3 minutes. Now put in the chopped spinach, green chilli, ginger, salt and sugar. Stir and cook the spinach for 5 minutes.
