My mother used to make this dish with morel mushrooms. If you have some growing in your local woods, do, by all means, use them. Just slice them in half lengthways. You could also use the darker field mushrooms; in that case, you would need to slice the caps. I tend to make this dish very frequently and find myself using the more easily available cultivated mushrooms. It is still a superb recipe and may be served with almost any meat dish in this book.
