This salad is made with the deep red, beetroot-like ‘bleeding’ carrot that is found in North India during the winter months. I have substituted the ordinary orange carrot. It may be served with nearly all Indian meals.

Peel the carrots and cut them at a diagonal into 3mm/⅛ inch thick oval slices. Cut the slices lengthways into 3mm/⅛ inch wide strips.
Halve the onion lengthways, then cut it across into 3mm/⅛ inch slices.
