This is a lovely, fresh-tasting halva that makes the most of the natural sweetness of carrots.


  • 450 g/1 lb carrots
  • 700 ml/ pi


  1. Peel the carrots and grate them either by hand or in a food processor. Put the grated carrots, milk and cardamom pods in a heavy pot and bring to the boil. Reduce the heat to medium and cook, stirring now and then, until there is no liquid left. Adjust the heat, if you need to.
