This tea, flavoured with cinnamon, cardamom and cloves, may be served at teatime or at the end of a meal. I love it on cold, blustery days, with some Spicy potato matchsticks to nibble on the side.


  • 570 ml/1 pint water
  • 2.5 cm/1 inch


  1. Put the measured water in a saucepan. Add the cinnamon, cardamom and cloves and bring to the boil. Cover, reduce the heat to low and simmer for 10 minutes.
  2. Add the milk and sugar and bring to a simmer again. Throw in the tea leaves, cover and turn off the heat. After 2 minutes, strain the tea into 2 cups and serve immediately.
