This is great recipe that can be made as a family meal or, once you have prepared everything, you can halve the mixture and cook one half for the kids to enjoy for an early dinner and the other for an adult meal later. It’s ideal for using up leftover potatoes, and it really doesn’t matter if they break up when you chop them. In fact, they become even crunchier that way.
