Nutty Noodles


If you don’t use the whole package of noodles and you have a block left over, they make a great quick lunch when you are on your own (or double up if you are not). Cook 1 portion udon, rice or egg noodles according to the package directions. Drain and toss with a drizzle chili or sesame oil, 1 tablespoon oyster sauce, 2 thinly sliced scallions, a squeeze lime juice or a splash rice vinegar and 1 small handful chopped cilantro leaves. Scatter 2 tablespoons chopped roasted peanuts or cashews over and serve.
