I have to admit, when chocolate is a must, these extremely quick-and-easy puddings are my guilty little pleasure. They are designed specifically for making in the microwave and are a true lifesaver. Stick to the basic pudding, or, for an additional treat, add a little surprise to them from the suggestions below. The cooking times are based on an 850-watt microwave. It’s pretty amazing to see these puddings cook in a matter of minutes.


    For the Chocolate Puddings

  • 3 tablespoons sunflower, vegetable, grapeseed or peanut oil, plus extra for greasing
  • 4 tablespoons self-rising flour
  • 4 tablespoons sugar
  • 3 tablespoons unsweetened cocoa powder
  • 3 tablespoons milk
  • 1 egg
  • ½ teaspoon vanilla extract


    1. Grease two microwave-safe teacups, small mugs or ramekins with oil. Mix together all the pudding ingredients until you have a smooth batter. Then divide evenly between the prepared dishes. If you are adding an extra treat, gently stir it in.
    2. Put in the microwave and cook on High 2 minutes.
    3. Tuck in either as they are, or turn out into bowls and enjoy with a spoonful of ice cream, if you like.
