  • 1 stalk lemongrass, outer layer removed and the rest roughly chopped
  • about 15 mint leaves, plus extra to garnish


  1. Put the lemongrass, mint leaves and preserved ginger in a mortar and pestle, mini food processor or even a strong sandwich bag and bash or whiz to a rough paste. (This can be done well ahead of time and kept in the refrigerator until needed.) Transfer to a cocktail shaker half filled with ice, then add the ginger syrup, vodka and lime juice. Shake a good 30 seconds.
