A special thanks goes to my friend Mai-yee for this recipe, the perfect appetizer for any oriental meal. The ingredients are readily available in supermarkets or oriental food stores. You will need white miso paste, because there’s no substitute, but you can use dry sherry for sake, very sweet sherry or 1 tablespoon rice wine with 1 teaspoon dissolved sugar for mirin, and vegetable or chicken stock for dashi, if necessary.
