This is a stunning dessert, but the pavlova loses its impact if it’s only small so I always make a large one. The guests appreciate it and we get lots left to enjoy the next day! As a treat for the kids, keep back some of the meringue and spoon small dollops (the size of a small walnut) onto a baking sheet. Put into the oven with the pavlova for just an hour. When they are cool, sandwich them together in pairs with a little whipped cream and jam or a chocolate spread to make what my children call “meringue kisses”.
