No apology is offered for proposing our own way of roasting a chicken whole, which we hope is in the South-Western idiom, but has a few touches of our own.

Ingredients

  • 1 yellow chicken (poulet jaune) about 2 kg with its giblets
  • tarragon stalks

Method

Make about 300 ml stock, unseasoned, with the giblets, tarragon stalks and the wing tips from the bird. Simmer for half an hour or more.

Preheat the oven to 220C/400C/gas mark 7. P
