Mushrooms are another favourite partner for rabbit. For this recipe, use cèpes if you can, but any wild variety will do.

Ingredients

  • 1 rabbit
  • 300 g mushrooms
  • 4 tbsp

Method

Joint the rabbit, wipe the mushrooms clean and cut them into quarters or thick slices if they are large.

In a heavy-bottomed cocotte, brown the rabbit pieces in half the fat. Remove and put aside. Add the remaining fat to the pan and fry the mushrooms, pork and onions over a brisk heat for 5 minutes. Return the rabbit pieces to the pan, moisten with 100 ml of water and season the
