Tarbais are more expensive than the other white beans mentioned above which are still popular (perhaps for cost reasons). In dried form, Tarbais can be bought from good food shops, or online from the cooperative. Here is just one way that haricots Tarbais can be put to good use. The recipe is poached from the famous village of Moustiers, near Monaco, but has a South-West feel about it.
