Apricots can be enjoyed in many ways. Our local friends make good supplies of jam to see them throughout the winter. They can be bottled or dried to use later in cooking. Here is a way of enjoying apricots without making a tart.

Ingredients

  • 8 apricots
  • 50 g sugar
  • 20 g butter

Method

Halve the apricots and remove and discard the kernels. In a wide frying pan, make a caramel with the butter and sugar.

Add the apricots, nuts, raisins, vanilla pod and spices. Add a little water and cook for 5 minutes on a hot flame.

Serve tiède, garnished with chopped mint.
