Praline powder is a delicious caramel and nut powder often used in European and now more and more in American pastry cooking.

To make it, you must first prepare a very sweet nut brittle with the nuts or mix of nuts of your choice. The nuts may be blanched or unblanched, as you prefer. Almonds and hazelnuts are usually blanched and skinned respectively, but walnuts or pecans are not.
