Jimmy Schmidt, my former student, and I pretty much came up with the same idea at the same time, and both presented it during the events of the Book and the Cook of 1988 in Philadelphia. But it wasn’t such a new idea, though; didn’t Moctezuma, his real name Motecozuma, drink such a hot chocolate brew? So why not freeze it and tame the heat? The pepper in this composition is not strong; rather, it comes on as a pleasant piquant aftertaste.</
