Tomato Chipotle Salsa

Ingredients

  • 6 medium-size sun-ripened tomatoes
  • 1 teaspoon grated lime rind
  • 1 teaspoon

Method

Place the tomatoes on a baking sheet. Turn on the broiler and grill the tomatoes until their skins char, a few minutes on each side. Remove from the oven and peel. Cool, seed, and cut the pulp only into ¼-inch pieces. Place the pulp in a bowl. Mix in the lime rind and sift and mix in the cocoa.

Meanwhile, place the onion cubes into a stainless steel strainer set over a bowl, salt lightl
