You will need 8 deep custard cups or one 8-inch-square pan. For a different old-fashioned English popover recipe. The bacon fat or butter can be replaced by the same amount of unsaturated oil.
Place the flour in a medium-size bowl and make a well in it. Add the chosen fat and, using a small whisk, gradually blend in the milk, salt and pepper to taste, and each egg separately until the mixture has the texture of heavy cream. Let stand 10 minutes.
