American-Style Popovers and Yorkshire Pudding

You will need 8 deep custard cups or one 8-inch-square pan. For a different old-fashioned English popover recipe. The bacon fat or butter can be replaced by the same amount of unsaturated oil.

Ingredients

  • 1 cup sifted unbleached all-purpose flour
  • 2 tablespoons unsalted butter, melted, or bacon grease plus

Method

Place the flour in a medium-size bowl and make a well in it. Add the chosen fat and, using a small whisk, gradually blend in the milk, salt and pepper to taste, and each egg separately until the mixture has the texture of heavy cream. Let stand 10 minutes. Preheat the oven to 450°F.
