I hadn’t heard of mishti doi, a jaggery-sweetened yogurt dish topped with a thin layer of ghee, until I was an adult during my first trip to the Eastern part of India. But when I discovered it, I was hooked: creamy, earthy, so wildly dairy-filled. It’s easy to translate this into a frozen version, and here it is!

Ingredients

  • 1 cup powdered jaggery (see Pooja’s Tip)
  • cups plain whole-milk Greek yogurt

Method

1 In a blender, combine the jaggery, yogurt, ghee, cardamom, and salt and blend until well mixed and smooth, 2–3 minutes.

2 Transfer the mixture to your ice cream maker and churn according to the manufacturer’s instructions. Serve the soft frozen yogurt right away, or place in the freezer to freeze completely.
