Salads, fresh chutneys, and some sauces are all called achar in Nepali. Here, in simi achar, green beans are cooked until just tender, then dressed in hot spiced oil and lemon juice and tossed with toasted sesame seeds, an approach very like that of the Nepali cucumber salad, and just as dazzling.
