This is a typical Sri Lankan “white curry” (coconut milk curry), but in fact the color is pale yellow from the turmeric. There are two approaches to white curries in Sri Lanka. One kind is flavored with Maldive fish and fenugreek seeds, as this potato curry is. The other style uses ground coriander and cinnamon.
