This is one of the family of buttermilk curries found in the northwestern parts of India, places where dairy products such as yogurt and buttermilk play a large role in the kitchen. I learned the curry from Pushpa, who comes from a small village near Barmer in the desert of Rajasthan but lives most of the year in the city of Udaipur, where her husband, Indra, works.
