Zinet’s Chicken with Tomato and Greens

One day our neighbor Zinet told me that fenugreek greens were fabulous cooked with chicken, and she described how she prepared them. We were in her photocopy shop in Toronto, talking about the recipe, and a young woman who overheard our conversation said delightedly, “But that’s the way my mother prepares it, too!” Turns out her parents are from Pakistan; Zinet’s forebears came from the Indian state of Gujarat.
