These sweet treats couldn’t be simpler. Slices of ripe banana are dipped in a smooth heavy batter made of egg and sugar whisked together, then dropped into hot oil and briefly fried. All you need is five minutes for whisking the batter and several minutes to get all the slices fried. They’re served hot, topped with finely ground black pepper, a wonderful taste hit. Textures are both crisp (the caramelized fried batter) and melting (the hot banana within). Flavors are sweet and hot.
