This custard, made from coconut milk and jaggery (palm sugar or crude sugar), is Sri Lanka’s most famous sweet, called watalappan. It’s steam cooked on the stove top. Watalappan is rather like the sankhaya of Thailand, very easy to make and delicious. But then again, what combination of coconut milk and palm sugar isn’t delicious?
