This combination became popular in its current form as a meal served in the Harlem restaurant Wells Supper Club. Leftover fried chicken was paired with waffles and maple syrup and served to very late-night/early-morning customers. I use boneless chicken here; however, bone-in dark meat is traditionally preferred.
Whisk together 2 cups buttermilk, eggs, and butter in a large glass measuring cup. In a large bowl, whisk together flour, baking powder, baking soda, and ¾ teaspoon salt. Place 1 cup flour mixture in a shallow dish; pour remaining 1 cup of buttermilk into a separate shallow dish. Set dishes aside.
