Sometimes all you want is a good pork chop. This brine gives great flavor as it tenderizes and keeps the chops moist. Allow for 4 hours of brining time.
In a medium pot over medium heat, combine 2¼ cups water, vinegar, 4 tablespoons maple syrup, salt, peppercorns, bay leaves, and garlic; simmer 3 minutes. Transfer brine to a shallow dish, and let cool. Marinate pork chops in cooled brine in refrigerator for at least 4 hours.
Remove pork chops from brine; discard liquid and pat chops dry. Season both sides with salt and pepper. Sear pork
