When I used to travel professionally more than I like to do now, one of the dishes I frequently chose to demonstrate was this one. Any kind of fish that will yield firm fillets or steaks is suitable, which meant I could prepare this dish anywhere in the country where there was some fresh fish available. And, at the tastings, audiences were pleased to discover that not only is red wine acceptable with fish, it can be startlingly good.
