Variation with Bacon

Method

After step 2 of the preceding recipe, add to the pan ½ cup of bacon shredded very fine. Turn on the heat to medium and cook until the bacon becomes lightly browned but not crisp. Add the endive, cook until very soft, add salt, return the carrots to the pan, cook for 5 minutes longer, then serve promptly.
