  • 2 pounds young zucchini, as small and fresh as possible
  • 1 tablespoon chopped garlic

Method

  1. Soak the zucchini in cold water for at least 20 minutes.
  2. Wash them in several changes of cold water, rubbing them with your hands or with a stiff brush to remove all soil. If the skin still feels a little gritty, peel the thin outer layer.
  3. Remove both ends from each zucchini and slice the zucchini into very thin disks.
