This simple dish offers a passing glimpse of a noble tradition and of the talents of a great cook. The cook is Lidia Alciati, whose husband Guido presides over the restaurant that bears his name. Guido’s is in the Piedmontese castle town of Costigliole d’Asti, just north of Alba, and has long deservingly enjoyed the reputation of offering Piedmont’s supreme dining experience.
