All that this wonderfully aromatic and comely salad asks of you is that you select very young, small, but not miniature, zucchini with tiny seeds. You want raw zucchini that will taste sweet and firm, not stale and spongy. The tomato too should be chosen at the seasons peak when it is firm and sugary. So many kinds of mint are available, from mild to spicy, that you can opt for the kind you find most pleasing.
