Method

Take your leftover spaghetti bolognese, which will be cold and stuck together. Cut through the cold pasta cake with a knife into 3 or 4 lumps.

You’re aiming for a sort of pasta-omelette-tortilla-frittata hybrid here. I like it looser, with less egg, some like it firmer, with more egg.
