Name: A Boxing Day Monster
Ingredients: Goose fat or butter; 2 tbsp of your best olive oil or posh rapeseed oil or something; 1 tbsp lemon juice or vinegar, plus extra for the patties; A big handful of parsley; ½ a baby gem lettuce; Leftover roast potatoes, bread sauce, cooked veg, stuffing etc., the soft stuff; 1 tsp of your favourite condiment (mustard, cranberry, horseradish, etc.); A massive piece of focaccia or a mini ciabatta from the supermarket, or something… It might be Boxing Day, so anything will do; 2 heaped tbsps mayo; 150 g leftover turkey or whatever you have; 5—6 leftover raw Brussels sprouts; 1—1½ carrots; 2 tbsp leftover gravy; 1 egg; 1 packet of pork scratchings or Ready Salted crisps or both; A two finger, one thumb pinch of salt and some pepper
