Marcos, as this sauce is known in the trade, is a fiery little tinker. Benefiting from the intense depth that burning the fuck out of peppers, onions and tomatoes will give a dish, and the smoky delight that chipotle brings to the party. Marcos will cut a legendary figure in any sandwich.
Lay out your garlic, tomatoes, jalapeños and red onion on a baking tray and place in the screaming hot oven. Cook for 15 minutes or until the surfaces of the veg are well and truly blackened.
