  • 200 g pine nuts
  • 1 garlic clove, grated
  • 2 tbsp red wi

Method

Find a blender or food processor. Add everything bar the salt. Blitz like a bad ass until smooth like body butter (1 full minute) Taste, season, and taste again.

In the sandwich from earlier in the book we used a nice pointy cabbage but this could done with purple sprouting broccoli, baby gem lettuces cut in half or a big broccoli ‘tree’ cut tip to toe into eighths and blanched in boili
