My Death Row Meal would be roast chicken, rice and coleslaw with soy sauce on the rice, and loads of hot sauce on everything. What’s yours? There’s no turkey in this section because my Mum always does two ducks at Christmas. They’re less dry and cheaper than a rip off massive turkey.

Method

This isn’t really a recipe, it’s a guide to cooking birds as best you can:

— Never cook a bird straight from the fridge. Get it out at least an hour before cooking.

— Season immediately and season well. Both the skin and the cavity. You are cooking this bird whole
