If you’re lucky and in france on your holidays, you might come across rillettes made with rabbit, duck, chicken or goose. Order it. This however, is a recipe for the most classic old fashioned one of all. Good old pork!

Ingredients

  • 500 g pork belly, skin removed, cut into 5 cm cubes
  • ½ tbsp Salt
  • 1

Method

Preheat the oven to 160°C.

Cut the pork belly into large cubes and toss them in a roasting tray with the salt, garlic, bay leaves, pepper and cloves. Put them in a single layer and add the wine. Cover with greaseproof paper and then two sheets of tin foil and place in the prehe
