Ingredients: 150 g dried white breadcrumbs like Ned Halley would make (you want either really really stale bread blitzed up, or buy panko breadcrumbs, or ask the baker if they do breadcrumbs); 1 white onion, finely diced; 150 g butter; 3 medium eggs, whisked up, on a plate; 200 g plain flour; 10 grinds of black pepper; 2 litres rapeseed oil; 5 tbsps plain flour; 1 litre full fat milk; ¼ tsp Salt
