Below there is a (hopefully) simple and (hopefully) foolproof recipe for a plain croqueta. Make it, enjoy it, bang it in a sandwich. Then, next time you have cold meat, some ham, some roast chicken, some prawns, cauliflower, peas or the ends of a pungent taleggio or mature cheddar, make it s
