  • 200 g bread, a few days old is perfect
  • 4 garlic cloves, peeled but left whole
  • 75 ml


Start by blitzing the bread in a food processor to a coarse, fine gravel-like texture.

Set the heaviest bottomed frying pan you’ve got over a medium heat. Warm the olive oil in the pan and add the garlic cloves to flavour the oil. When they have sizzled a little and turned brown, remove the cloves and add the breadcrumbs to the pan.
