Panelle (from Sicily), Farinata (from Liguria) and Cecina (from Tuscany) are all the same bloody thing and all ridiculously simple.

They are easy to make and delicious to eat. It is a niche product, so this might be the first you are hearing of it, and if so, please try making it, and please try putting it in a sandwich. The Italians do it. Nuff said.
